Ingredients
1 1/2 pounds chicken breast
2 tablespoons olive oil
salt
pepper
3 cloves minced garlic
3/4 cup chicken broth
1/2 cup heavy cream
1/3 cup freshly grated parmesan cheese
1/2 cup sun-dried tomatoes
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
basil, for garnish
angel hair pasta for serving, optional
Instructions
Preheat oven to 375 degrees Fahrenheit.
Meanwhile, pound chicken breast down to about 1/2 thick and season with salt and pepper on both sides.
Heat oil in a cast-iron skillet or oven-proof pan over medium-high heat. Add chicken and sear for 3-4 minutes on each side.
Remove chicken from the skillet and set aside on a plate. Add garlic to skillet and cook for about 1 minute or until fragrant.
Add chicken broth and heavy cream to skillet. Then add parmesan, sun-dried tomatoes, oregano, and red pepper flakes.
Bring to a simmer, then return chicken breasts to the skillet. Spoon sauce over each chicken breast, then transfer the skillet to the oven.
Bake for 15-20 minutes or until chicken has reached an internal temperature of 165 degrees Fahrenheit.
Garnish with basil and serve over angel hair pasta if desired. Enjoy!
